Start by getting a fresh, locally grown pumpkin. Cut it half and be sure to remove the stem. Place the two halves on a baking sheet, with the skin facing up, and roast it until that same skin is coming right off. Finally, simply peel the skin off, and blend what is left. Now you have your pumpkin puree, ready to use! Even their seeds are a fan-favorite when roasted.
