What You’ll Need:
• 1 unbaked pie shell
• 1lb bunch of asparagus
• 2 green onions
• 2 tablespoons of flour
• 2 cups of shredded cheddar cheese
• 3 eggs
• 1 cup of half and half
• 1/2 teaspoon of salt
• 1/2 teaspoon of basil
• 1/2 teaspoon of cayenne pepper

What You’ll Need to Do:
First order of business: preheat oven to 425°. While we wait, let’s go ahead and prep our asparagus. Cut into ½ inch pieces, boil until tender, and drain and set aside to let cool. By now, the oven should be ready; bake the pie shell for 6-7 minutes. While that’s baking, dice 2 green onions and toss in a large bowl with 2 tablespoons of flour and set aside.

In a separate bowl, beat 3 eggs with half and half, a ½ teaspoon of salt, a ½ teaspoon of basil, and a ½ teaspoon of cayenne pepper. When our pie shell is ready, turn the temp down to 325° and spread the asparagus, onion, and flour mixture over the crust and top with 2 cups of shredded cheddar. Evenly pour the egg mixture over the cheese and bake for 35-40 minutes. Allow to cool for up to 10 minutes, and you’re ready for a slice of heaven!
