What You’ll Need:
• 1 can red kidney beans
• 1 honey sweet onion
• 1 Jersey Fresh tomato
• 1 large Jersey fresh green bell pepper
• 1 pint Muzzarelli Farms blueberries
• ½ c crumbled feta cheese
• 4 T light olive oil
• 6 T aged balsamic vinegar
• 1 t salt
• ½ t freshly ground black pepper
• ¼ t curry powder (optional)
• 1-2 T sugar
How to Make It:
1. Rinse and drain the kidney beans and place in a bowl.
2. Cut vegetables into bite-size pieces and add to the kidney beans. Stir in blueberries, feta, olive oil, vinegar, salt, black powder, sugar, and curry powder (optional). Cover the bowl and refrigerate for at least 1 hour before serving. Enjoy!
This sounds amazing. Have to go buy feta!
