The perfect party starter: sweet and savory sweet potato rounds with fresh goat cheese, cranberry, pecan, and honey. Get everyone’s mouth watering this holiday season with something sure to surprise the palate.
Here’s what you’ll need:
- 1-2 small sweet potatoes
- ½ cup of dried cranberries
- ¼ cup of toasted pecans
- 2 ½ teaspoons of olive oil
- 4 ounces of softened goat cheese
- 1 tablespoon of milk
- 1 teaspoon of finely chopped rosemary
- Drizzle of honey
- Salt and pepper
Here’s what you’ll need to do:
Let’s first preheat the oven to 425° while we prep our sweet potatoes and get everything ready to bake. Wash any dirt off your sweets, and begin slicing them into ¼ inch-thick medallions—you can do this by hand or with a mandolin slicer.
In a large bowl, toss your sweets with 2 ½ teaspoons of olive oil and some salt and pepper until medallions are evenly wet. Next, arrange your sweet potatoes on a foil-lined baking sheet with non-stick cooking spray, and bake for 8 minutes on each side.
While your medallions are baking, in a separate bowl, whip together 4 ounces of softened goat cheese with 1 tablespoon of milk, 1 teaspoon of finely chopped rosemary, and a dash of salt and pepper until your mixture is creamy and smooth.
When your sweets have baked on both sides, spoon the mixture onto each medallion, and top with pecans, cranberries and drizzle of honey.
Serve your sweet potato rounds warm or at room temperature, and watch them disappear!
