Few vegetables are versatile as cauliflower. You can mash them, make a crust, a tortilla–or a even a pizza! But sometimes simpler is better—and you can never go wrong with savory roasted vegetables. This recipe for roasted cauliflower is as easy as it is delicious.

What You’ll Need:
• 1 head of Cauliflower
• ¼ cup canola or olive oil
• ½ cup chicken broth
• Salt and pepper to taste
• Grated cheese to taste

What You’ll Need to Do:
Before we prep our cauliflower, let’s preheat the oven to 375°. Tear a piece of foil long enough to cover a shallow baking sheet, and set aside. In a large bowl, toss cauliflower with ¼ cup of canola or olive oil, salt, and pepper, and arrange on our baking sheet. Carefully pour ½ cup of chicken broth over florets, and then fold the excess foil inward to cover the cauliflower.

Place in the oven and allow to roast until fork-tender or slightly browned. After roasting, sprinkle with grated cheese and recover for five to ten minutes, serve, and enjoy!
