Sweet potatoes are deeply woven into the “roots” of Muzzarelli Farms’ history. We’ve been growing these tuberous root vegetables for more than 80 years. While our family-owned and operated farm business now raises more than two dozen varieties of fruits and vegetables, we still take tremendous pride in growing, harvesting and curing our sweet potatoes.
We are now taking orders for sweet potatoes, as the early fall is prime time for harvesting and curing them. You might ask, “Why do sweet potatoes need to be cured?” The simple answer is, to maximize the sweet flavor, and help them to store longer.
We cure our sweet potatoes in a temperature- and humidity-controlled environment to increase sugar content, enhance flavor, heal any flesh damage from harvest, and to make the flesh color more vibrant. Thanks to our curing process, once you get our potatoes home, you can store them in a dry box in a basement or cool pantry for six to 10 months (under good conditions).
Not only are sweet potatoes incredibly versatile (they can be baked, boiled, roasted, fried, steamed, or pan-cooked, with or without the skin), but they are loaded with health benefits, too. They are a great source of fiber, vitamins, and minerals. They are rich in cancer-fighting antioxidants that protect your body from free radicals.
