Most people in Kentucky picture the standard orange potatoes when thinking about sweet potatoes, but there are other varieties as well, featuring different colors and flavors with which you can experiment to enhance your meals or inspire your Kentucky customers to try something new!
Covington sweet potatoes are the "classic" orange sweet potato we all know and love. Covington sweet potatoes have a hearty but bright taste, are ideal for any season or meal in Kentucky, and are suited for both raw and cooked applications, including mashing, baking and roasting. They can be used raw and shredded over salads, or they can be baked or roasted in traditional sweet potato casseroles and served as a stand-alone side dish. Covington sweet potatoes are an excellent source of Vitamin A, Vitamin C, iron, calcium and fiber. The rich, sweet, orange flesh is moist and creamy, with incredible flavor. Bonita sweet potatoes are very sweet, considered by many people in Kentucky to be the sweetest, most delicately flavored sweet potatoes they've ever tasted. They make great sweet potato fries! The ghostly white Bonita sweet potato looks nothing like its golden-orange cousins, but has a sweet flavor as unique as its unusual white skin and flesh. They're irresistible when roasted, grilled, baked, boiled or fried. They're also an excellent source of fiber and potassium.
Murasaki sweet potatoes are a beautiful rich purple color which can brighten up any plate. This white-fleshed, elongated sweet potato cultivar is not as easy to find in Kentucky as some other more common varieties. The texture and flavor of Murasaki sweet potatoes are sometimes described by our Kentucky customers as a cross between Russet potatoes and orange sweet potatoes. They have a nutty-sweet flavor that falls somewhere between the sweetness of Covington sweet potatoes and the raw earthiness of Russet potatoes. With a wide variety of culinary applications, Murasaki sweet potatoes can elevate the taste of even simple mashed potatoes or French fries, leaving you, your friends, or your Kentucky customers wanting more! Murasaki sweet potatoes are a great source of vitamin A, vitamin C, potassium, and fiber.
At Muzzarelli Farms we begin planting our sweet potato crops in early May. Following a strict regimen provided by our proven process, Charlie Muzzarelli insisted the micro-propagation must expand, so he implemented a steadfast system of ensuring only the best sweet potato plants be used. As part of this plan, the system of no more than two generations of the same plant strain would be used in the growing of sweet potatoes for our Kentucky customers.
Slips (rooted sprouts from a mature sweet potato) are very carefully selected and nurtured. Transplanting of the slips requires a level of expertise and precise handling that comes with years of experience and dedication that many sweet potato growers in Kentucky may not yet have attained.
Harvesting generally takes 95 to 120 days from planting, so our sweet potatoes are ready for harvesting for our Kentucky customers around September. We use a plow to turn up the roots to the top of the soil, where the sweet potatoes are harvested by hand to avoid damaging their delicate skin.
After harvesting, we begin curing the sweet potatoes, which extends their shelf life by sealing in moisture, and enhances their flavor. Curing activates enzymes (called "maltose sugars") that sweeten the potato, providing a richer, more fragrant flavor that our Kentucky customers love. The process of curing typically takes up to ten days, and helps heal any damage done to the sweet potato during harvest. It's a long, extra step, but this helps us get the most out of our sweet potatoes so our Kentucky customers can enjoy them even more!
Muzzarelli Farms uses a unique process of curing sweet potatoes in an environmentally controlled facility that yields a near-field quality product for up to one year after harvest.
The process of sweet potato curing and storing more than 200,000 bushels makes certain Muzzarelli Farms can offer the highest quality sweet potatoes for Kentucky and the entire United States!
Once the sweet potatoes are ready for packing, our 20,000 sq.ft. packing facility springs into action sizing, grading and packing at a rate of 20 cases per minute!
After our sweet potatoes are finished with the curing process, they are ready for storing. The process of storing requires six to eight weeks to steep sugar production in our already-cured potatoes. This will help lengthen shelf life and provide an even richer flavor in the end. This is just one of the many reasons that our sweet potato customers in Kentucky tell us that Muzzarelli Farms sweet potatoes are the best they've ever tasted!
Once you get your sweet potatoes home or to your Kentucky store or restaurant, store them in a cool, dark, dry environment to ensure they're at peak sweetness for when you're ready to cook with them. When stored correctly, they can last up to six months, and even 12 months!
