Preheat the oven to 375°. Cut and core apples into quarters, and line them in a baking dish greased with non-stick cooking spray. Pour 1/3 cup of apple cider or juice over the apples, coat with 1/2 cup of brown sugar, and cover with aluminum foil. Bake for 45 minutes, and remove from the oven.
Pour 1/3 cup maple syrup over the top of the apples, sprinkle with apple pie spice, and allow to cool. Add a few scoops of vanilla ice cream, and you've got yourself an irresistible fall treat that also makes a great Thanksgiving Day dessert!
