In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
Add the shredded cabbage, chopped green beans, and sliced carrots to the skillet. Stir well to combine.
Sprinkle cumin powder, paprika, salt, and pepper over the vegetables. Mix until evenly coated.
Cover the skillet and cook for about 15-20 minutes, or until the vegetables are tender, stirring occasionally.
Once cooked, remove from heat and transfer the cabbage with beans and carrots to a serving dish.
Garnish with fresh parsley and serve hot.
